Sue always, deliberately, cooks way too many vegetables for Christmas dinner, and keeps back some of the homemade turkey stuffing and makes oodles of gravy, so Boxing Day lunch is Bubble & Squeak with gravy.
The best Bubble & Squeak just has to contain the following (though
you can vary to your own taste):
- Roast potatoes
- Roast parsnips
- Brussels sprouts
- Sage & onion stuffing
Chop all root veg into smaller pieces. Then it will be easy to mash everything together. Once combined, fry in a little oil, turning frequently so you get a nice, crunchy crust on both sides. Serve with hot gravy and fresh bread. Almost as good as Christmas dinner!
